  1. Preheat the oven to 170C/325F. Line a large baking sheet with parchment paper and set aside.

  2. In a large mixing bowl, combine your dry ingredients and mix well. In a separate bowl, whisk together your wet ingredients until combined. Gently fold in the dry ingredients into the wet, until fully incorporated. Fold through your cranberries at the end.

  3. Lightly flour a kitchen surface. Remove the dough from the bowl and form two equal portions. Using your hands, form two rectangular loaves, 1-inch in size.

  4. Place the two loaves on the lined pan and bake for 20 minutes, until golden brown.

  5. Remove the loaves from the oven and let cool for 15 minutes. Reduce the oven heat to 120C/250F.

  6. Slice up the two loaves into 1/2-inch biscotti, and place them on the lined baking sheet. Bake the biscotti for an additional 20 minutes.

  7. Remove from the oven and let cool completely.

Homemade Vanilla Extract

  1. Split the vanilla beans lengthwise (or cut into 1" size pieces) and place into a container (a glass bottle works best). Fill the container with alcohol, preferably vodka, and let beans infuse at least 4 weeks, shaking gently every few days. Stored in a cool dark place.

  1. Use a peeler to remove the rind from a clean lemon and place into a container (a glass bottle works best). Fill the container with alcohol, preferably vodka, and infuse for 4 weeks or more, shaking gently every few days. Stored in a cool dark place.

The making of Lemoncello

Ingredients

10 Lemons

1 Liter Vodka 80 proof

Instructions

  1. Using a veggie peeler, I peeled the rind from the lemons , carefully not to get too much of the bitter pith, I preferred the peeling method opposed to zesting. I thought it went faster by peeling. Place all your rind or zest into a 32oz (1 qt) jar with a good lid

  2. Pour the liter of vodka into the jar, close with your lid and sit in a darkish space and leave undisturbed. The longer it sets the better it is. Gradually, the vodka will turn yellowish. You can take it up for the processing after a few days or after a few weeks. Here, I left mine three and a half weeks.

  3. I used a coffee filter inside of a fine strainer or you may use whatever filter you have on hand. I poured the lemon-vodka through the filter catching all remnants of the lemon rinds.

  4. Prepare your simple syrup, Use equal parts, suar and water I started with one-cup each, into a sauce pan over low heat, not to cook the mixture just let it warm through to dissolve the sugar. Now you have simple syrup.

  5. So, you should have a yield of about three-cups lemon-vodka and you will need to add (depending on your taste) the one-cup syrup to your vodka. This should net you four-cups total. Pour two-cups vodka into one-16 oz jar with a swing-lid. You have enough left for another 16-oz jar

  6. I refrigerated mine.






Cheesy Smoked Sausage with Pasta

  • 1 onion chopped (prepare for sauté)

  • 2-3 garlic cloves minced (prepare for sauté) I like to use more

  • 1 lb smoked sausage sliced (prepare for sauté)

  • 2 c chicken broth (more if needed)

  • 1 can diced tomatoes.

  • 8oz bowtie pasta uncooked

  • 3/4 c heavy whipping cream

  • S & P to your taste

  • 1 c shredded cheese

  • 1/4 c sliced green onions

Sauté smoked sausage, onion, garlic, 5-6 minutes. Pour in chicken broth, can tomatoes, hwc, and uncooked pasta. Stir to combine adding s/p as needed. Once pasta is al dente and ingredients are combined lower flame to a simmer adding the cheese. Mixture will thicken so I added more broth.

I garnish with fresh parsley for color and freshness.

Spicey Chicken Noodle Soup


  • 2 chicken breasts seasoned w/ salt & pepper, garlic powder, onion powder, poultry seasoning, and smoked paprika.

  • 2-3 jalapeños

  • 4-5 whole garlic cloves

  • Give everything a good coat of olive oil

  • Roast in 400-degree oven for 30 minutes

  • while that roasts sauté chopped celery 3 stalks and 1 onion chopped

  • 2 tbl better than bouillon chicken paste

  • can carrots drained

Cut chicken into chunks, dice the jalapenos with seeds, smash roasted garlic, add all ingredients together is stew pot, Add in 2-32 oz box's chicken broth and add wide noodles until el dente. Finish off the richness by adding in salted butter. Allow flavors to marry and incorporate, if you dont you will miss some of your flavors, dont rush it!
